Hakurei Turnips

Hakurei Turnips!!

so we got these turnips in our CSA pickup last week and we were both just staring at them like: what the F are we supposed to do with them? so i altered a recipe for Turnip Mashed Potatoes. they’re lighter than mashed potatoes and healthier and they taste really great!

1 bunch of hakurei turnips
3-4 medium potatoes
salt and pepper
diced dried onions
butter

Peel turnips like you’d peel a potato. cut into halves and boil along with potatoes for about 30 minutes. drain. use a hand mixer on low and mix them all together back in the pot. add 2 tablespoons of butter and mix again. add 2 tablespoons of diced dried onions, and then salt and pepper to taste, while mixing.

total time 40 minutes.
i think this probably serves 3-4. the two of us had way too much leftover.
